In autoimmune diets you temporarily exclude potato. If you are craving fries, I have a delicious recipe for crispy sweet potato strips instead. These are at least as good – if not better – than regular potato fries!

Eating according to autoimmune diet, or AIP, means that you exclude a range of foods for a certain amount of time. This is done to give the gut and intestinal mucosa a chance to heal and thus relieve, or become completely free from, symptoms of, for example, autoimmune disease, allergies and chronic stomach problems (IBS).

Unfortunately, during the elimination, all potato plants are excluded. This group includes potatoes, tomatoes, eggplant, bell peppers, chilli, goji berries and physalis.

The elimination usually lasts between 4 and 12 weeks and after this time you can retrieve all these goodies again according to a method called reintroduction.

The reason for excluding potato plants is that they contain anti-nutrients such as lectins, saponins and capsaicin. They are there to protect the plants against invaders such as bacteria and pest insects. In the same way that they negatively affect the plants’ natural enemies, they can also affect and irritate the intestinal mucosa and, in the long run, disrupt the immune system.

So to be on the safe side I recommend sweet potatoes or other root vegetables instead of potatoes. Later on, you will also receive recipes for a good substitute for tomato sauce, which I call “NOmatsauce” but first it is time for crispy sweet potato fries.

Crispy Sweet Potato Fries

Ingredients

1 large sweet potato

1 Tbsp arrowroot

2 Tbsp olive oil

1 pinch sea salt

Instructions

Peel and julienne the sweet potato, about 1.5 cm thick strips. They shrink some into the oven so don’t make them too narrow.

Put them in a bowl of ice cold water with a pinch of salt and leave them for 30 minutes. Put the oven at 210C/425F. Pour off the water and dry them a little with a paper towel, they can be a little damp.

Powder them with a thin layer of the arrowroot all around. Lay them on a baking sheet lined with paper. Drizzle some olive oil over the fries.

Cook in the middle of the oven for 20 minutes. Take out the sheet and flip the fries, bake for another 5-8 minutes. Watch out so they don’t burn! Eat them while they are warm.
